Brew & learn
400g ships on the 5th with an SCA recipe card from our Authorized Trainer.
Billing & shipping
When you're charged, and when it ships.
Your card is billed monthly from the date you first subscribe — but your box always ships on our shared batch day, the 5th. So the gap between being charged and shipping depends on your billing date. Two examples:
You're charged on the 8th. That month's 5th has already passed, so your first box ships on the 5th of the following month — and that pattern repeats every month after: charged the 8th, that box ships the 5th of the next month.
You're charged on the 2nd. The 5th hasn't happened yet that month, so your box ships just 3 days later, on the 5th of the same month — and that pattern repeats every month after: charged the 2nd, shipped the 5th, same month.

“Every month I choose the two origins the same way I grade a table — for texture, sweetness, and what the cup has to teach. It isn’t just coffee; it’s a lesson a month.”
August 2026
This month's box, and how to brew it.
Every box's members-only lot this month is Colombia Sidra, paired with either Nicaragua Pacamara or Ethiopia Gesha Village as the seasonal pick — so here's how our SCA trainer brews each one.
Colombia Sidra
Washed · 1,750m — red berry, citrus, caramelized sugar, floral finish
Pour-over92–94°C · 1:16 · medium-fine grind. Sidra gives up its sweetness fast — pour quickly and evenly for a clean, tea-like cup.
Espresso18g in, 45g out (1:2.5), ~28s. The longer ratio tames the acidity and lets the caramelized sweetness carry through.
Nicaragua Pacamara
Washed · Yellow Pacamara — tropical fruit, honey, citrus, full body
Pour-over93–95°C · 1:15 · medium-coarse grind. The larger bean needs a slightly coarser grind to extract evenly, keeping the body rich without dulling the fruit.
Espresso18g in, 38g out (1:2.1), ~27s. A shorter ratio shows off the honeyed body Pacamara is known for.
Ethiopia Gesha Village
Natural · Chaka — jasmine, stone fruit, wine-like, intensely aromatic
Pour-over90–92°C · 1:16 · medium-fine grind, 30–45s bloom. Naturals over-extract into mud easily — go slow and gentle to keep the florals clean.
EspressoHonestly, we'd brew this one as filter, not espresso — its aromatics are easiest to muddy under pressure. If you try it anyway: 18g in, 40g out, pulled short.

The coffee is definitely worth it and the people were super friendly… and did I mention that the coffee was amazing?
Lovely artisan coffee in Shinjuku — a must visit. Their speciality beans are the best; really an oasis in Shinjuku.
